Burning Tree Native Grill Recipes


Burning Tree Native Donut Holes

1 recipe fry bread
oil for frying
1/2 cup sugar
1 teaspoon Cinnamon

Pinch off dough from fry bread a large as 1 1/2 in diameter. Heat oil to frying temperature and fry the dough balls. Once golden brown turn our on paper towel to absorb excess oil then while hot dust with cinnamon sugar and serve hot or cold as snacks.


Burning Tree Roast Leg Of Lamb

1 pc leg of lamb (6 lbs.)
salt and pepper to taste
2-4 cloves garlic, crushed
1 can beef consume
1 can soup can of water
2 T. vinegar
1 pc onion, sliced
basting sauce
1 cup catchup
1 cup burgundy wine
1 cup wild berry jelly; see note

Rub leg of lamb with salt, pepper and crushed garlic, You may substitute powdered garlic if you wish. Add consume, water, vinegar and onion slices to roasting pan. Insert meat thermometer to thickest part of lamb. Put lamb in preheated 450 oven and bake for 15 minutes. Baste with sauce and reduce
heat to 350 and continue roasting and basting until thermometer registers 145 to 150 degrees for medium rare, 160 to 170 degrees for well done. Serve on warmed platter and garnish with watercress. Drippings may be reduced if needed and passed in gravy boat.
Chefs note: huckleberry, serviceberry or current jelly or jam can be used.

Burning Tree Chicken Squash

1 tablespoon oil
2 boneless chicken breast halves - cut into chunks
1/2 onion, chopped
3 cloves garlic, minced
1 small butternut squash, peeled and chopped
1 can hominy, (15.5 ounce) drained
1 carrot, peeled and chopped
1 can diced tomatoes (14.5 ounce) with juice
1 can vegetable broth (14 ounce)
1 tablespoon sugar
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon New Mexican chili powder

1. Heat the olive oil in a large skillet over medium heat, and cook the chicken, onion, and garlic about 15 minutes, until browned.
2. Mix the squash, hominy, carrot, tomatoes with juice, broth, and sugar, into the skillet. Season with salt, cumin, and chili powder . Bring the mixture to a boil, and continue cooking 30 minutes, until vegetables are tender. Serve over cooked wild and brown rice.

Burning Tree Wild Rice With Pine Nuts
1 envelop Lipton onion soup mix
3 cups water
1 cup uncooked wild rice
2 cups brown rice; hot cooked
1/2 cup cranberries, dried
1/2 cup pine nuts, toasted
2 T. finely chopped parsley or coriander; (cilantro)
1/4 cup butter or margarine

In large pan, blend onion recipe soup mix with water; bring to a boil. Stir in uncooked wild rice and cook covered at a slow boil 50 minutes or until water is absorbed and rice kernels appear split. Add remaining ingredients and toss well.

Burning Tree Huckleberry Wine Sauce
1/2 cup granulated sugar
1 tablespoon cornstarch
1 cup dry white wine
1 teaspoon lemon juice
1 1/2 cups huckleberries, fresh or frozen OR
1 cup huckleberry jam

In small saucepan, stir together sugar and cornstarch; stir in wine and lemon juice. Cook, stirring constantly, over medium heat until mixture thickens, clears and comes to slow boil. Stir in huckleberries and simmer, stirring, for 1 minute or until some of the berries burst. Let cool and refrigerate. Can be used for game meats and desserts.

Pink Dragon Fruit Jelly (????)





During last year's class party, my student Ng Kher Chee brought this amazingly pretty jelly... It was dyed bright pink like magenta, dotted with some black seeds. She told me, it was made with the red dragon fruit.

I call this pink dragon fruit jelly, because it looks more pink than red.... wonderful colour.

I like eating the fruit raw, making it stain my lips with a pretty tint. Hehe..so vain..

Pink Dragon Fruit Jelly Recipe

Ingredients:
1.5L Water
200-250gm sugar
15 gm agar-agar powder
1 medium sized red dragon fruit (about 1 cup)

Method:
1. Bring the water to a boil.
2. Mix the sugar and agar powder together and pour into the boiling water. Let it simmer for 5 minutes.
3. While simmering, mash the red dragon fruit with a fork until it becomes a puree. Don't use a blender as we want the seeds to be visible in the jelly.
4. Turn off the fire and pour in the dragon fruit puree.
5. Stir and pour into prepared mould.
6. Wait for it to cool down and then chill in the fridge.

Actually this fruit isn't much aromatic nor does it have a distinct taste..but nontheless, it's the colour that is really pretty.
I think I may do this jelly again, with some modifications on the flavour.

I don't know why the camera cannot capture the real colour that I saw with my own eyes, it's more reddish rather than pink... a bit dissapointed..


The seeds of the dragon fruit tends to settle down on the bottom. I cut the jelly bottom side up to get a nice outlay of seeds.

Peanut Cookies ???


Not so traditional peanut cookies


When I was a small kid, I love the peanut cookies that my aunts (maternal side) made. Every Chinese New Year, my brothers will look forward to their kuih kapit, but I am waiting for the peanut cookies instead.

The traditional recipe calls for lard, but thinking of my mother who has hypertension, better not. Changed the tasty unhealthy fat to corn oil. So, it's not-so traditional already. It's not as soft, but still it's soft enough to be scarred and chipped by fingernails. So better be careful when transfering them. Many scarred ones went into my mouth and my hubby's mouth... It still melts in the mouth.

Yummy yummy! This is my first attempt..hehe.

Peanut Cookies

Ingredients:
1 kg flour
1 kg peanuts (the raw weight, then roast it, deskin and ground til fine)
1 kg of fine sugar (not icing sugar, can use caster sugar or fine granulated sugar)
400 ml corn oil (might need more depending on oil level of peanuts used)

1 egg (beaten)
1/2 cup peanut halves for deco

Method:
1. Mix flour, sugar and peanuts until well blended together.
2. Pour in the oil and knead until the oil is well incorporated. Add more oil if dough is dry.*
3. Take a small amount of peanut dough onto palm and roll into a small ball the size of a marble.
4. Place the peanut ball onto a baking tray and place a peanut half onto it. Lightly press the peanut half.

*If you reduced the sugar, you will need more oil to bind the dough together
*If you used icing sugar, the effect will be SWEETER




5. By using a chinese calligraphy brush (mopit), glaze the peanut ball with a beaten egg.



6. Bake at 180C for 12 minutes or until the egg glaze turns golden.







Tada!!! Nice and golden. Hubby can't wait to pop one into his mouth!

I made about 550 pcs of peanut cookies with this amount of ingredients. Cost? Around RM11 only not inclusive of electricity of course.. Cheap hoh!! But darn lot of work, especially preparing the peanuts:- roasting, deskinning, airing and grinding!! One afternoon for the peanuts, one for the cookie. 2 afternoons to make 550 pcs of peanut cookies. Quite time consuming actually, but if one has the time, can save a lot of money instead of buying them at RM15-20 for 100 pcs.

I'm making this again next weekend... cos I don't think what I made today is enough to be shared among my relatives.

The dough will become dry if you do these 2 things
1. Reduce the sugar
2. Use store bought roasted peanut nibs.

So, roast your own peanuts (those with skin) and do not reduce the sugar. If you do reduce the sugar you need more oil to bind the dough. So choose, oil or sugar, up to you to keep the dough intact.


Note: 24/1/2012
If you prefer floury, fine peanut cookies, mill the peanuts together with the flour, this way your peanuts will be as fine as flour. Then use icing sugar, but reduce it to about 750gm (icing sugar taste sweeter), then you will need more oil, probably, 500ml or more. Gauge it as you form the dough.
If you want a really melty peanut cookie, that doesn't need any effort to eat, use LARD (pig fat), or GHEE.
This cookie is crumbly, but not really that fragile. If you prefer yours with some mouthfeel, not too fine, then just follow the recipe exactly, use caster/fine sugar and stick to the amount. Somehow I find too fine peanut cookies stick to my throat and I prefer this version is isn't too fine, tooooooo melty. Up to you :)

Tangy Melting Hearts ???




Chinese New Year coming soon....

I had this idea of creating a melt in the mouth cookie with a strong citrus taste.

This is the first attempt. I like them a lot..... but my hubby who doesn't like sour stuff find them not so appealing. He asked me to substitute the taste, but retain the texture.

So, any suggestions? Maybe orange... hmmm....

Tangy Melting Hearts Recipe

125gm soft margerine, softened
100 gm icing sugar, sifted
1 pinch salt

Cream the above together
This is (A)

half egg, beaten
juice from 1 lime (limau nipis)
juice from 1/2 lemon
grated zest from 1 lime, 1/2 lemon

Combine and put into (A). Mix well and this becomes (B)

Sift 150gm corn starch, 50gm superfine flour, 1 tbsp custard powder and combine with (B) until smooth.

Pipe out heart shapes and decorate with a sugar heart in the centre.
Bake in a preheated oven 180C for 7 minutes.

Practice makes the heart shapes better, tho not perfect
All ready for the oven.

Try not to brown the cookie, and if the cookie base is not totally dry from the baking and cooling, place cookies overturned in a flat plate , microwave on medium for 1 minute or 2. U'll get crispy cookies after that.

The centre piece was nice and not browned, I baked it for 6 minutes, and microwaved on med for 1 min. The other 8 surrounding the fair one was baked for 7 mnutes.

Amaranth Soup with Century Eggs ?????

What is amaranth? Some Malaysians may not know.

What is bayam? We know.

Bayam is edible Amaranth (Amaranthus tricolor, A. gangeticus, A. oleraceus, A. mangostanus ) lor! Hmmm..some may call it spinach, but spinach is Spinacia oleracea. Well, some call bayam as Chinese Spinach, but in Wikipedia, Chinese Spinach can also be Kangkung(Ipomoea aquatica) and Malabar Spinach or as Malaysian call it as Emperor's Shoots (Basella alba)

For those that can understand cantonese, what do u think is spinach then.....? In Cantonese Spinacia oleracea is Por Choy, and edible amaranth is Yeen Choy, Kangkung is Ong Choy and not forgetting Malabar Spinach is Charn Choy or Tai Wong Choy too.

For those that cannot understand cantonese, just a look at the scientific name and make ur verdict.

Ok, enough said about spinach. This page is about edible Amaranth.

So, here's a picture of my soup



It does look a bit murky, due to the century eggs. My hubby loves this soup.

Amaranth Soup with Century Eggs Recipe

Ingredients:
A bunch of Amaranth (about 150-200 gm before trimming)
A handful, abt half cup of cleaned anchovies (bilis, I used Terengganu large anchovies, really yummy)
1 tbsp oil
1 century egg (cut into 8 pcs)
3 cups water (water will be reduced when simmering bilis)
1/2 tsp salt

Method:
1. Heat a saucepan, put in oil and saute the anchovies for a while and put in water. Boil, cover and turn low heat simmer for at least 15 minutes.
2. Take out the boiled anchovies. (U can retain them if u want, but they're rather tasteless already)
3. Put in trimmed Amaranth and boil for a minute or 2 depending on size of plant, baby bayam will need less time. Add salt and taste.
4. Put in century egg and boil for another minute. (this makes it murky, but it taste better)
5. Place soup in a bowl and serve.

Xmas Chocolate Cake ???????





I made these cakes as Christmas gifts to my church members using my Chocolate Moist Cake recipe.



The words were done with Royal Icing (I think they're called that, I got the recipe from snooping around a book fair when I was 15).



Baked them in round foil pans




And I didn't have enough pans, so I baked them in mini loaf pans, and wrapped the sides to hide the ugliness.

I asked my sister in law to pass to them on Sunday, as I can't make it to church that day.
And on Christmas day, which was 2 days later, I recieved lotsa good comments and people asking for the recipe. They said it was really moist and nice.

The Chocolate Moist Cake recipe is my first entry, do check it out, not by looking, but by trying it out yourself.

I got the recipe from http://www.bestmoistchocolatecakerecipe.com/, and did some minor modifications to it.


Royal icing recipe: (according to me..haha)

454 gm icing sugar
1 egg white
juice from 1 lemon

Mix them all together and ta-da.. start piping.

It will not harden much, due to the acidity of the lemon juice. If you want it to really harden up, replace the lemon juice with 3 tbsp water.
