Vietnam Pork Tenderloin
Recipe Makes for 4 Servings:
2 lb pork tenderloin
salt
2 tbsp neutral-flavored oil, plus extra
MARINADE:
4 cloves garlic, crushed to a paste
2 tbsp finely minced shallots
1/2 tsp five spice powder
1 tbsp fish sauce
1 tbsp sugar
1/4 tsp black pepper
Directions:
In a small bowl, combine the ingredients for the marinade. Stir until the sugar has dissolved. Thoroughly coat the meat with the marinade and place in the refrigerator for a few hours.
Remove the meat from the refrigerator 1/2 hour before grilling. Wipe excess marinade off the meat and rub it with salt.
In a small saucepan, bring the remaining marinade to a boil and add the 2 tbsp of oil and salt to taste. Set aside for use as a basting sauce.
Prepare grill with high and medium heat zones. Just before you begin grilling, oil the hot grate. Place the tenderloin on the grate above the high heat and grill each side for 2-3 minutes basting with oil from time to time. Move the tenderloin to the medium heat zone, baste with the marinade and continue to grill for 15-20 minutes, while frequently turning until done.
